Cook together 1 medium chopped onion and 1 medium chopped pepper in 3 T butter, until onion is yellow and clear.
Add 1 lb. ground Belgian Blue meat and saute until mixture falls apart. Drain meat, notice how little fat there is in this meat. For added fat reduction, rinse the cooked ground meat with hot water. Add 2 cups canned tomatoes, 1 T chili powder, 1/4 t pepper, 1/2 cup uncooked rice, & 1 t salt.
Mix and pour into greased baking dish. Bake at 350 degrees for 45 minutes.
This is very quick and easy and can be made ahead, refrigerated and popped into the oven for a quick meal. Serve with bread sticks and salad. You have dinner fit for a king.
- 1/3 cup flour
- 2 T olive oil
- 1 T salt
- 1 medium onion, sliced
- 1/3 t pepper
- 2 lbs. round or chuck steak 1" thick
- 1-8oz. can (1 cup), seasoned tomato sauce (or stewed chopped tomatoes with onions & peppers
- 1 (10 & 1/2oz.) pizza sauce or spaghetti sauce
Combine flour, salt and pepper and pound into steak. Brown slowly on both sides in hot olive oil. Pour tomato sauce and pizza sauce over meat. Top with onion slices. Simmer uncovered 10 minutes in iron skillet. Cover and bake at 350 degrees for 1 hour or longer until steak is fork tender.
- 1 can tomato soup
- 1 can light cream of celery soup
- 1oz. pkg. no egg noodles (cooked)
- 8oz. fat free cheddar cheese
- 1/4 cup brown sugar
- 1/2 cup diced onion
Combine beef, onion and sugar in deep dish, layer meat mixture, soup, noodles and cheese. Bake 30 minutes at 350 degrees.
